Risotto alla luganighetta
Ingriedenti (per 4 persone)
100 g Cipolla tritata
50 g Burro
300 g Riso Terreni alla Maggia
400 g Luganighetta
30 g Aglio tritato
150 g Pomodori concassée
2 dl Merlot del Ticino
1 l Brodo di manzo
60 g Burro fresco
100 g Formaggio dell’Alpe a dadini piccoli (o Sbrinz grattugiato)
2 Robiolino
Preparazione
Rosolare nel burro la cipolla e l’aglio tritati finemente. Aggiungere la luganighetta sgranata, soffriggerla con la cipolla, aggiungere il riso, farlo cuocere, bagnare con il vino rosso. Lasciar evaporare e aggiungere a poco a poco il brodo bollente.
Terminare la cottura e mantecare aggiungendo burro e formaggio. A discrezione si può guarnire con delle fettine di robiolino fresco.

100 g Gehackte Zwiebeln
50 g Butter
300 g Reis (Terreni alla Maggia)
400 g Luganighetta
30 g Knoblauch gehackt
150 g Zerkleinerte Tomaten
2 dl Merlot del Ticino
1 l Rinderbrühe
60 g Frische Butter
100 g Alpkäse in kleinen Würfeln (oder geriebenen Sbrinz)
2 Robiolino (Frischkäse aus Kuhmilch)
Zubereitung
Die feingehackten Zwiebeln und den Knoblauch in der Butter anbraten.
Die Luganighetta ohne Haut beifügen, zusammen mit den Zwiebeln anrösten, den Reis beifügen, mit dem Rotwein ablöschen und aufkochen.
Den Wein verdunsten lassen und löffelweise kochende Rinderbrühe beifügen.
Wenn der Risotto bissfest fertig gekocht ist, Butter und Käse beifügen und alles glattrühren.
Nach Wunsch können Robiolino-Scheiben als Dekoration verwendet werden.

50 g De beurre

30 g D’ail émincé finement
150 g De tomates concassées
2 dl De Merlot du Tessin
1 l De bouillon de bœuf
60 g Beurre frais
100 g De fromage de l’Alpe en petits cubes (ou Sbrinz râpé)
2 Robiolino (petit fromage frais)
Préparation
Faire revenir l’oignon et l’ail dans les 50 g de beurre.
Ajouter la luganighetta hors du boyau et défaite, la faire revenir avec l’oignon, ajouter le riz,
continuer la cuisson et mouiller avec le Merlot.
Laisser évaporer et ajouter petit à petit le bouillon très chaud.
Terminer la cuisson, retirer de la plaque et tout de suite ajouter le beurre et le fromage.
Laisser reposer quelques minutes, couvert.
Selon les goûts garnir avec des tranches de robiolino frais.

30 g Finely chopped garlic
150 g Tomato concassé
200 ml Merlot from Ticino
1 l Beef stock
60 g Fresh butter
100 g Finely diced Formaggio dell’Alpe cheese (or grated Sbrinz cheese)
2 Robiolino cheeses
Preparation
Brown the finely chopped onion and garlic in the butter. Add the broken up luganighetta sausage, fry it with the onion, add the rice, leave it to cook for a few minutes and then add the red wine. Leave the wine to evaporate and then gradually add the boiling stock. Once the rice has finished cooking, cream with butter and cheese. Garnish with slices of fresh Robiolino cheese to taste.
